Stewed rabbit with olives
ingredients
400 g. Lapino puota rabbit lumbar part, boneless
1/2 Onion
1 Carrot
1 clove Garlic
According to need Butter
400 g. Canned tomatoes, crushed in their own juice
20 pieces Green olives
1 tbps Chopped herbs (sage, oregano)
According to taste Salt and pepper

Stewed rabbit with olives

Preparation
  1. Fry the chops with butter in a pan. Add some salt and pepper. Put the chops aside.
  2. Cut the onion into cubes, and slice the carrot and the clove of garlic. Fry the carrot with the onions using the melted butter in the pan, and at the end of the cooking add the garlic and fry for one more minute. Pour the canned tomatoes into the vegetables, add the rabbit chops and olives, and simmer covered on a low heat for 30 minutes. When 5 minutes are left until the end of cooking, add the herbs and flavour with salt and pepper.
  3. Serve the stewed rabbit with mashed potatoes seasoned with chopped chives. Bon appetit!
