Oven-braised rabbit with vegetables
ingredients
600 g. Lapino puota rabbit chops
6 strips Cold smoked bacon
1 tbsp Butter
2 Onions
4 cloves Garlic
10 sprigs Fresh thyme
2 tbsp Fresh chopped parsley
10 pieces Large mushrooms
4 Potatoes
100 ml. Dry white wine
According to taste Salt and pepper

Preparation
  1. Halve the rabbit chops. Sprinkle them on both sides with salt and freshly ground black pepper.
  2. Heat a dash of oil in the pan and fry the rabbit meat on both sides. Replace the meat on the plate.
  3. In the other pan, fry the bacon sliced into small pieces until it is done, and place it into a deep baking tray.
  4. In the same pan, melt the butter, add the diced onion and fry until it is soft. Then add of the finely chopped garlic and fry for about 1 min.
  5. Add the fried onions and garlic to the thyme, parsley, peeled and sliced potatoes, and the halved mushrooms, and pour the wine into the baking tray. Add a little salt and mix everything together.
  6. Place the rabbit chops on the top, cover the tray with the foil and bake in the oven at a temperature of 180 degrees for 55 minutes. Serve with steamed green beans, green peas and a little olive oil. Bon appetit!
