Oven-braised rabbit ribs

Oven-braised rabbit ribs
Preparation
- Sprinkle the rabbit ribs on both sides with salt and freshly ground black pepper. Roll them in the flour and shake off the excess. Fry the ribs on both sides in a pan, using a little oil. Place the ribs onto a baking tray.
- Pour a little oil into another pan, cut the onion into cubes and fry until it is soft. Then add the leek cut into semi-circles, the diced cloves of garlic, and the mushrooms cut into 4 parts. Then add the rosemary and chilli pepper, and fry for a couple of minutes.
- Pour in the chicken broth and the canned tomatoes, increase the heat and when the broth boils, pour everything over the ribs.
- Cover the baking tray with foil and bake in the oven at a temperature of 180 degrees for 1 hour. Bon appetit!
