Dry the rabbit thighs with a paper towel and sprinkle with ground pepper on both sides.
Then wrap each thigh with 2 strips of bacon, and place them into a baking tray covered with baking paper. Bake in an oven heated to 180 degrees for 20 minutes.
Remove from the oven and place a sage leaf soaked in olive oil on each thigh. Bake for an additional 20 minutes, or until the meat is done. Serve with your favourite garnish. Bon appetit!
