Peel the potatoes, cut them into thin slices, and cut the courgette in the same way. Grease the frying pan with butter and place in the prepared vegetables in layers – potatoes, courgette, potatoes, courgette. Fry the duck leg meat together with the chopped onion and put into the frying pan on top of the potatoes and courgette. Put the cold bacon pieces on top.
Briefly fry the flour in the frying pan (do not wait until it has a brown colour), stir in 2 tablespoons of butter and add the milk, stirring constantly. Cook the sauce for 3-5 minutes, constantly stirring so that it does not burn. Season the sauce with salt and pepper, and stir in two-thirds of the cheese. Pour half the sauce over the top of the dish and place the prepared frying pan into a 200 ºC oven. Pour in the remaining sauce after 30 minutes, sprinkle with grated cheese and thyme, and leave to cook for another 10-15 minutes. Do not be afraid to experiment with other vegetables or spices.
