The name of this beef steak results from the so-called marbled eye that is present in the middle of the steak. The fatty veins seen around the eye melt during cooking; thus, the meat remains succulent, soft and does not lose any of the minerals it contains. Prior to freezing, the steak is dry-aged for at least 28 days. This allows the best taste properties of the meat to be revealed. This beef is one of the most valued types of meat, and is rich in iron, protein and amino acids.
